Why play a low clan at all?
Because they have access to certain skill sets that high clan characters could/would never dream of possessing!
Low Clan Professions
Rat-Catcher - This highly respected trade was very much appreciated as vermin and disease were the scourge of medieval city life. The rat-catcher used cats, traps and a willingness to go where his prey went in order to rid a village, town or city of rodent infestations.
It was a lucrative and honourable job, although it put the long term health of the rat-catcher at risk from filthy crawlspaces and cornered, rabid rats.
Gangrel or especially Nosferatu are suited to this proffesion.
Chandler - This seemingly innocuous trade has two connections to the world of cainites.
It is one job that allows an excuse to go about by night without suspiscion, and it allows the acquisition of the ability of firewalking as it is necessary for the chandler to work closely with flame.
Coal-Maker - Dirty and labourious work, the Coal-maker's wares were the cornerstone of many other medeival industries, especially where coal mines were not readily available.
The coal-maker would select specially chosen and prepared woods and tend special fire pits, often for several days and nights in a row to create coals of differing characteristics for uses as varied as alchemy to weaponsmithing.
Again, this job allowed no suspicion to walk the night, inures the tradesman to flame (somewhat) and perhaps allows special skill creating certain fire-hardened wooden implements....
Town Crier - The low born town crier was an anomally in his day. Of humble birth, he none-the-less was a skilled orator, educated and was equally skilled in reading, often in several languages. Few high clans would consider this mortal for inclusion among their ranks, but an ambitious man of low birth could go far with this skill set and his many local connections and contacts...
Soapmaker/Dyer/Tanner - Where do they get all that tallow?
Another job that allows one to move about by night, unaccosted by watchmen as these professions literally stink up the place. The materials used in these industries are so noisome, they are given their own section of town...downwind of everyone else preferably!
Cooper - connections to Trade Influence
Drover - connections to Trade Influence
Shipwright - connections to Navy background
Fisherman - connections to Street influences
Vinter - as above, plus a place at the high clan table as a valued servant/merchant and low born land owner.
